This is nice, and uses 8 eggs!

Roast or fry anything savoury up, ie onions, bit of bacon or sausage, bit of red pepper, mushroom. Thyme is a lovely addition.

At the same time boil up some lentils, 4 or 5 good handfuls.

Pour those cooked things into a lasagne dish, then pour over a beaten mixture of 8 eggs and creme fraiche, and mix it all into a goo. Bake in oven for 25 mins. :smt023 :smt016 Yum!

That sounds gorgeous!! Good way to use up all those surplus eggs too. How much creme freiche do you use?

2 or 3 heaped tablespoons of creme fraiche for 8 eggs - you don't want it too runny.

I'm afraid I'm the kind of imprecise cook who always has a guess rather than get the scales out - except with cakes, which are too important to be gambled on!

If stuff comes out too big (it always does) - well, we all know where the leftovers go. Clu-uuck cluck bu-uuck -bucck cluckk :smt054 They love lentils.
